Treacle, known locally as ‘Kithul Pani’, is a sweet wild syrup made from the nectar of a type of fishtail palm, or ‘Kithul’, tree. The tree bears several flowers at once in its 15-year average life span. Local artisans climb the tree to tap the flowers by hand, using traditional knowledge passed down for generations. The collected nectar has to be aged, slowly heated & stirred for lengthy periods of time before it achieves the perfect texture & taste. An intimate part of the local cuisine, this beloved ingredient is hard to find in its purest, undiluted, additive-free form. When it’s completely free of sugar like our treacle, the flavour is woody, floral & sweet, with a texture in between that of molasses & maple syrup. These rare products we bring to you are true labours of love. Both our treacle & jaggery are perfectly untainted by any harmful chemicals (of course!), but it’s also completely free of added sugar. Why change a time-tested traditional treasure? Perhaps our forefathers had perfected something in their many trials.
